Ranch Style Cooking
After a hard day of driving cattle and cowboyin’, these long forgotten men look forward to a moment’s peace and a hearty supper…if they were lucky. This great responsibility fell on the shoulders of one man. After all his other duties as doctor, dentist, barber, and trail hand, he was the backbone of the outfit. He was the cook. With a few simple ingredients, this dedicated soul knew how to satisfy and give strength to his compadres for another day on the trail. In the same way, our outfit hopes to inspire and feed your appetite, as well as your spirit.
A Cowboy’s Grace
Dear Lord,
I am just a humble man who spends most time on the range,
So hearin’ from someone like me might sound kinda strange.
I know I have been mighty lucky for all you’ve shown and given,
I know there are those who look upon this old cowboy
who aren’t quite so forgiven.
Under this night’s sky I say thanks for the journey and food you’ve given me to eat.
Hat in hand I’ll do you proud hoping one day we might meet.

Headers
Wyatt’s Wings
We figured chickens can’t fly anyway, so they don’t need their wings and we are proud to serve them to you!
Drenched in one of our three sauces:
- Louisiana Hot
- GC Ranch BBQ
- GC Ranch Sweet Jalapeno Pepper
Good Courage (GC) Ranch sauces are proprietary recipes, made fresh on site. Our BBQ sauce is a southern blend of 20 secret ingredients. The Sweet Jalapeno Pepper sauce is one of our favorites from our own line of jams! If you like it ask us, we sell it on-site.
One Pound of wings
Drive-In Nachos
Not your typical mexican restaurant nachos
Maggie’s BBQ Nachos
A true southern original, not often found west of the Mississippi. Tortilla chips smothered in jalapeno cheese sauce and our GC Ranch BBQ sauce with smoked BBQ pork and a dash of cajun seasoning.
Johnny Nachos
A hearty portion of our Drive-in Nachos topped with, thanks to John Wells, marinated grilled chicken.
Grandma’s Deep Fried Raviolis
Not handmade like my Great-Grandma used to (please forgive me Grandma) but still pretty tasty.
Wyatt’s Pile
If you’d like to know why it’s called the “Pile”, ask Connie. She came up with the name. A sampler platter with Nachos, Sweet Jalapeno, BBQ, and Louisiana Hot Wings, Beer Battered Onion Rings, Deep Fried Raviolis, Chicken Skewers and all of our sauces for dipping.

Burgers
The Plain Jane
We’ll start out simple…1/2 lb. Burger, Bun, Lettuce, Tomato. If only life could be this simple.
The Cheeseburger
Alright, were going take it up a notch. Same as the above but with two slices of cheese. Your choice American or Pepper Jack.
The Bacon Cheeseburger
Another notch…Same as the above with two big strips of bacon. Or four small strips depending how you like it. But please break them up yourself and don’t have me ask the cook, he’s real busy and has a bigger knife than I do.
Manny’s Southwest Charro Burger
Now we don’t have enough notches for this one. Break out the spurs, settle into the saddle and head for the border! (traffic in that direction should be light) Our 1/2 lb. burger topped with bacon, pepper jack cheese, guacamole, lettuce, tomato and onion. If you would a more spirited ride, we can bury it in jalapenos for ya. And warning…This burger does not come with Amnesty, but it is served with a handful of chips and homemade pico de gallo.
Swiss Mushroom Burger
A half-pound burger smothered in sauteed mushrooms topped with two slices of swiss cheese.
Diablo Burger
Like it hot? Try a half-pound burger topped with two slices of pepper jack cheese, smothered in jalapeno peppers and Louisiana hot sauce.
Doe’s Double Barrel Burger
Two all beef 1/2 lb. burgers, special sauce, lettuce, cheese on a sesame seed bun. A burger almost as big as the legend. “Your a daisy if you do, because we’re your huckleberry.”

Sandwiches & Salads
Pig On A Bun
Or whomever else’s name you’d like to see on a bun…we’ll leave that up to your imagination. Generous amounts of smoked pork shoulder piled high on a bun with our GC Ranch BBQ sauce. For a buck more, get it southern style, the way it was intended to be enjoyed…smothered in coleslaw.
Arizona Cheese steak
Made the Wyatt’s way with grilled peppers, sauteed onions and pepper jack cheese.

Az.-Mex
Tucson’s Classic Chicken Chimichanga
It was in 1922 in the kitchen of Tucson’s El Charro Restaurant where Monica Flin accidentally created the first chimichanga. We do our best to recreate this Arizona legend with a 12″ flour tortilla stuffed with marinated chicken, grilled onions and salsa verde. Deep fried to perfection served on a bed of lettuce with sour cream and our homemade guacamole. They don’t make ‘em like this in California, until now.
Cheese Crisp
Another Arizona original hardly ever found outside the state. Similar to a quesadilla, in that it involves a tortilla and cheese, but that’s where the similarities end. We take a 12″ flour tortilla, cover it with a 1/2 lb. of cheddar and guacamole. Flat not folded is the way it’s done.
Benito Wilson’s Fish Taco
Big Bear’s biggest fish taco named in honor of the gentleman who was the first white man to discover the valley. In 1845 when Mr. Wilson saw Big Bear Valley for the first time, the fish were big and the bears were-a-plenty! Though Benito and his men didn’t eat fish tacos, we believe if they did they’d have been as big as ours. As always our fish is baked and never fried.
Great American Bar Taco
Big Bear’s biggest taco. Made with our secret mix of meat, beans and spices then deep fried with cheese and topped with lettuce and taco sauce all in a 12″ tortilla.
Chicken Tacos
Three soft tacos stuffed with marinated grilled chicken smothered in our homemade pico de gallo served with a side of guacamole and sour cream.
William’s Burrito
The Great American Bar Taco simply wrapped and not deep fried the way William likes it.
Emet’s Veggie Burrito
A 12″ tortilla stuffed with grilled green peppers and onions, fresh cabbage, green onions and tomatoes topped with Emet’s Sonoran sauce.

We’d personally like to thank Shane Dominguez, who’s passion for cooking and steadfast friendship were instrumental in bringing this new menu to life. Our family would like to thank all our regulars who have stood by us through the years and who without we couldn’t keep Wyatt’s simply Wyatt’s.
And heartfelt thanks to the Wyatt’s Posse – now 500 members strong. Who would have thought! The spirit of the West continues to thrive in the Posse and the gentleman who’s namesake we bear. The concept of ‘right and wrong’ is still alive. If you’re interested in joining our outfit, we’d love to have ya and just so you know what you’re signing up for, here is the oath that each of our Posse members have sworn to uphold:
I do solemnly swear, to the best of my ability, to celebrate life each and every day.
To so my best, to make each and every moment count.
To the extent that I am able, to help those in need.
To look after my neighbor and be loyal to my friends.
To always protect and defend my family, this great valley adn those who are unable to protect themselves.
